Easy Vegan Meals for Beginners
A simple mix-and-match method plus a five-ingredient chickpea rice bowl for a first vegan dinner.
Quick answer
Choose one protein, one starch, two vegetables and a sauce. A chickpea rice bowl is a reliable first meal because most ingredients are ready to eat and you can change the seasoning without changing the method.
What you need
- For two bowls, use 1 can drained chickpeas, 2 cups cooked rice, 1 cucumber, 2 tomatoes and 4 tablespoons hummus.
- Keep lemon juice, salt and pepper nearby; optional chopped parsley or chili flakes change the flavor without adding another cooking step.
How to make it work
- Warm the rice and chickpeas until hot. Chop the cucumber and tomatoes while they heat.
- Split rice and chickpeas between bowls, add vegetables, and thin hummus with a little water and lemon juice for a pourable sauce.
Checks and useful changes
- Check canned chickpeas for salt level and rinse them if preferred. Frozen vegetables are a useful swap when fresh produce is expensive.
- If you plan to eat vegan long term, make a plan for vitamin B12 through fortified foods or supplements.
